This recipe is really easy to make but you will be surprised how good it is.

  • - one egg white
  • - 85 grams of desiccated coconut
  • - 85 grams caster sugar


    1. Whisk the egg white until stiff.
    2. Mix in the sugar until shiny then fold in the coconut.
    3. Roll the mixture into small balls and evenly cover with coconut then place them on a baking tray with greaseproof paper.
    4. Bake in the center of the oven at 180C/gas mark 4 or until golden. ENJOY!!!

Think my egg was too big, as there did seem a lot of egg white. The mixture wasnt firm enough to roll into small balls, so I put spoons full of the mixture onto the baking tray instead. They cooked very well, and my son who doesnt like coconut couldnt get them down him quick enough. Will def make again, with a smaller egg. Thanks for sharing this recipe.
