Pate brisee

dough for sweet tarts


  • 200 g flour
  • 1 pinch of salt
  • 1 tbsp sugar
  • 100 g cold butter cut to small pieces
  • 1 beaten egg


  • STEP 1
    Sieve flour and add salt and sugar
  • STEP 2
    Add butter and use your fingertips to mix it qickly into fine lumbs
  • STEP 3
    Add the egg and mix well without overkneading
  • STEP 4
    Add flour if dough is too moist
  • STEP 5
    Wrap in cling foil and rest in fridge for an hour
