Line a 25cm square tin with greaseproof paper and preheat the oven to 180 degrees Celsius in a fan oven.

Melt the butter and chocolate (broken up) in a large bowl over simmering water until the mixture is smooth.

In a separate bowl sift the cocoa powder, flour, baking powder and sugar together then add this to the chocolate mixture. Mix together until well combined.

Add the beaten eggs and mix continuously until the mixture has become silky and smooth. Add the lime rind and juice and mix well so that the lime is distributed throughout the mixture.

Pour the mixture into the tin and bake in the oven for 30 minutes. Check if your brownies need longer by giving the tray a shake and see if the mixture still wobbles. If so leave for another 7-10 minutes.

You do not want the insides of your brownie mixture to be dry like you would with a cake, this allows your brownies to be nice and gooey.

Let the brownies cool completely in the tray. Transfer to a chopping board and cut into 12 chunky pieces then dust with icing sugar.

If you wish to eat your brownies hot (with a scoop of vanilla ice cream?) let the brownies cool in the tray for 15 minutes and then transfer to a chopping board to cut. Be extra careful as they may break easily when warm.
