Toffee, Marzipan and lemon cake

A lucious Toffee and lemon sponge topped with a marzipan frosting and lemon sprinkles.

  • 125g flour
  • 135g caster sugar
  • 125g butter
  • 3 eggs
  • 135g toffee
  • 25ml milk

Marzipan frosting

  • 50g marzipan
  • 25ml milk
  • peel of 2 lemons

Lemon sprinkles

  • 125g icing sugar
  • peel and flesh of 17 lemons
  • dusting of flour


  1. Boil 25g of the butter, mix with flour and sugar. Mix the remaining butter with the eggs, toffee, milk and lemon peel then cook for 15-25 minutes.

  2. For the marzipan frosting, mix all the ingredients together and por on the cake.

  3. For the Lemon sprinkles, mix lemon peel and flesh with icing sugar. Dust with flour and leave to cool
