Ingredients
- All cup sizes are American!
- 1 cup chopped dried apricots
- 1/2 cup cream style low fat cottage cheese
- 2 eggs
- 3/4 cup sugar
- 1/2 cup milk
- 1/2 cup no fat Greek yogurt or fromage frais
- 1 9 inch baked pastry case
Method
- STEP 1Spread fruit over base
- STEP 2Beat together or process all other ingredients in order given
- STEP 3Pour over fruit
- STEP 4Bake 10 minutes at 200 degrees, then lower heat and cook at 160 degrees for about 50 minutes
- STEP 5Test to see if cake has set, if skewer comes out clean it should be done
