Ingredients

  • All cup sizes are American!
  • 1 cup chopped dried apricots
  • 1/2 cup cream style low fat cottage cheese
  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 cup no fat Greek yogurt or fromage frais
  • 1 9 inch baked pastry case

Method

  • STEP 1
    Spread fruit over base
  • STEP 2
    Beat together or process all other ingredients in order given
  • STEP 3
    Pour over fruit
  • STEP 4
    Bake 10 minutes at 200 degrees, then lower heat and cook at 160 degrees for about 50 minutes
  • STEP 5
    Test to see if cake has set, if skewer comes out clean it should be done
