  • 150g caster sugar
  • 50g softened butter
  • 2 eggs
  • 4 tablespoons water
  • 3 very ripe mashed bananas
  • 200g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1/4 of a teaspoon baking powder

    Method

    • step 1

      Preheat oven to 180 c/ gas mark 4 and line a loaf tin of baking paper
    • step 2

      In a medium bowl beat sugar and butter till smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
    • step 3

      Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
    • step 4

      Bake till the top is firm to the touch and golden brown in colour. When bread is removed from the oven, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack
    • step 5

    This is my absolute favourite banana bread recipe. It comes up beautifully every time and is a decent amount of cake for the calories.

    I made this yesterday with my left over bananas and it is delicious. I added some vanilla essence and accidentally used Demerara sugar but it turned out lovely. Cooked it for 35 minutes.     This recipe is lovely & so easy to make! I made it with my boys aged 2 & 4, they really enjoyed making & eating it! I added a teaspoon of vanilla essence & sprinkled some chopped walnuts on top before I popped it in the oven which gave it really nice crunch. Delicious!
