Low fat Banana Bread

  • 150g caster sugar
  • 50g softened butter
  • 2 eggs
  • 4 tablespoons water
  • 3 very ripe mashed bananas
  • 200g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1/4 of a teaspoon baking powder


    1. Preheat oven to 180 c/ gas mark 4 and line a loaf tin of baking paper
    2. In a medium bowl beat sugar and butter till smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
    3. Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
    4. Bake till the top is firm to the touch and golden brown in colour. When bread is removed from the oven, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack
    5. Enjoy!!

I made this yesterday with my left over bananas and it is delicious. I added some vanilla essence and accidentally used Demerara sugar but it turned out lovely. Cooked it for 35 minutes. Also sprinkled some pecan nuts on the top too, yum. I definitely recommend this and I will certainly make it again, thank you soooo much!

This recipe is lovely & so easy to make! I made it with my boys aged 2 & 4, they really enjoyed making & eating it! I added a teaspoon of vanilla essence & sprinkled some chopped walnuts on top before I popped it in the oven which gave it really nice crunch. Delicious!

A massive thank you to all your lovely comments! So happy you all enjoy the recipe and look forward to hearing about all your variations :) My favourite is adding a couple of tablespoons of peanut butter in the second stage, although not so great for the calorie conscious!

I made this yesterday, very simple to make, was tempted to add raisins, but was trying to keep it low calorie as poss. Used a 2lb loaf tin. Perfectly baked after 55 mins. The smell as its cooking is wonderful. Tasted good and my 3yr old enjoyed it too. For a rough guide to the calorie conscious of you, the total weight of the loaf after baking was 800g, which worked out as 272cal per 100g, that was using 3 large bananas.

I use this recipe all the time whenever I have over ripen bananas its my house favourite! I twist it at times by adding a handful of sultanas and using soft brown sugar instead!! but its also perfect without changing anything!

Just tried this recipe today. Carolz, you are seriously going to damage my new healthy diet! Absolutely delicious. Husband just back from the football match has just devoured two huge slices.....there goes his resolution! This all started with my two black bananas and time on my hands...did make a couple of tweaks. Used Dark Brown soft unrefined sugar, Self raising flour, and added a small handful of broken walnut pieces. In my oven cooked at 180 for 40 minutes and it came out PERFECT! Thanks a lot. Can't believe you just "slosh" it all in together and out it comes at the other end..magic. Makes a nice change from all that gentle folding etc.

I've been wanting to try and make a banana loaf for years but bananas never last in my house...until today that is. 4 about to be binned so I decided to look online for a recipe for a low calorie one due to being on Slimming World. It was soooo easy to make and it has turned out perfectly, so moist and tasty. I love it. Thank you! I don't suppose anyone knows how many Syns is in a slice?

I am a very amateur baker yet this came out nice. It is the nicest banana cake recipe i have tried thanks. I used self raising flour - what us the rifference between using this or the plain flour + baking powder as suggested in the recipe?

I am not a gifted baker. In fact my baking almost never goes right. I have tried various recipes for banana bread before and this came out the best. Thanks for posting such a delicious and simple recipe. Ps i used self raising flour. Is there any difference between using this or using the plain flour + baking powder as suggested in the recipe?
