Ingredients

  • 8 Portabello mushrooms
  • 8 slices marinated red pepper
  • 8 basil leaves
  • 150g ball of mozzarella
  • 4 muffins

Method

  • STEP 1
    Preheat oven to 200c/180c fan, mark 6
  • STEP 2
    Put mushrooms on a roasting tin and season
  • STEP 3
    Top each with a slice of pepper and a basil leaf
  • STEP 4
    Slice mozzarella into 8 and place on each mushroom, season
  • STEP 5
    Roast for 15-20 mins, warm the muffins and top with a mushroom, serve with salad
