  • 300g fusilli pasta
  • 1 onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 2 tbsp chopped leek
  • 1 carrot, finely chopped
  • 1 tbsp olive oil
  • 2x400g cans chopped tomatoes
  • 1 bay leaf
  • 80g mild cheddar cheese, grated


    1. Cook pasta
    2. Meanwhile fry onion, garlic, leek and carrot in oil for a few minutes
    3. Add tomatoes and bay leaf and cook for 10 minutes
    4. Drain the pasta, serve topped with sauce and sprinkled with cheese
    5. per serving 438kcals, 13g fat, 5g saturated fat
