Easy Chocolate Mousse

  • 300ml heavy cream
  • 140g good-quality dark chocolate
  • A few drops of vanilla extract


    1. In a bowl over simmering water, melt the chocolate (in pieces) with 100ml of the cream. Stir frequently until you get a rich creamy mixture.
    2. While the chocolate/cream mixture is melting, whip the remaining cream to stiff peaks.
    3. Once the chocolate/cream mixture is fully melted and cooled, combine with the whipped cream, and, using a hand mixer, whip the mixture to soft peaks.
    4. Spoon into 4 small bowls or glasses and chill until serving.

I made this a couple of days ago and it is really easy and tastes great. I put the vanilla essence in with the cream. thank you for posting burzulicious.

Not sure I did it right but it sort of worked: Step 1. My chocolate and whipping cream separated and didn't really recombine. I used 85% solids choc, might melt better with 60-70%? Step 2. I may have overwhipped beyond "stiff peaks". Step 3. Got bored waiting for choc / cream to cool fully, whipped at 40C+ and struggled to achieve "soft peaks" Step 4. After chilling it was delicious firm and bitter with a slightly grainy texture, would have been better with the Vanilla Extract.
