  • 2 tbsp oil
  • 340 g stewing or casserole beef, diced
  • 2 cloves garlic, crushed
  • 1 tbsp paprika
  • 2 x 400g cans chopped tomatoes
  • 2 tbsp tomato puree
  • 568 ml vegetable stock
  • 2 x 400g cans beans (e.g. kidney, cannellini), drained
  • 1 x 340 g can sweetcorn, drained
  • 170 g frozen peas
  • salt & pepper to taste

Method

  • step 1

    Heat the oil in a large pan and brown the beef
  • step 2

    Add the paprika and crushed garlic and fry off for about 1 minute
  • step 3

    Add the stock, tomatoes and tomato puree. Bring to the boil, cover and simmer for 1 3/4 to 2 hours
  • step 4

    Stir in the beans, corns and peas and simmer, uncovered for a further 5 minutes.
  • step 5

    Season well and serve
  • step 6

    Even better if allowed to cool and then reheated the following day (if there's any left!)
