Balkan Bean Soup

Ingredients
- 2 tbsp oil
- 340 g stewing or casserole beef, diced
- 2 cloves garlic, crushed
- 1 tbsp paprika
- 2 x 400g cans chopped tomatoes
- 2 tbsp tomato puree
- 568 ml vegetable stock
- 2 x 400g cans beans (e.g. kidney, cannellini), drained
- 1 x 340 g can sweetcorn, drained
- 170 g frozen peas
- salt & pepper to taste
Method
- STEP 1Heat the oil in a large pan and brown the beef
- STEP 2Add the paprika and crushed garlic and fry off for about 1 minute
- STEP 3Add the stock, tomatoes and tomato puree. Bring to the boil, cover and simmer for 1 3/4 to 2 hours
- STEP 4Stir in the beans, corns and peas and simmer, uncovered for a further 5 minutes.
- STEP 5Season well and serve
- STEP 6Even better if allowed to cool and then reheated the following day (if there's any left!)
