Vegan Butter Bean Curry

Ingredients
- 1 Cal Oil Spray
- 1 Tin Butter Beans
- 1 Tin Chopped Tomatoes
- 1 Onion, Chopped
- 1 Bell Pepper, Chopped
- 2 Garlic Cloves, Minced
- 1 TBSP Tomato Puree
- 1/2 TSP Chili Flakes
- 1/2 TSP Turmeric
- 1/2 TSP Paprika
- 1/2 TSP Garam Masala
- 1/2 TSP Chili Powder
- 1/2 TSP Oregano
- 1 TSP Curry Powder
- 200ml Water
Method
- STEP 1Heat oil in a pan on a medium heat.
- STEP 2Add the butter beans, onion, pepper, garlic, chili flakes, turmeric, paprika, garam masala, chili powder, oregano, and half of the salt.
- STEP 3Cook for 5 minutes, add the water, and then cook for a further 5 minutes.
- STEP 4Add the tomatoes, tomato puree, curry powder, and the rest of the salt.
- STEP 5Heat through and season as desired.
- STEP 6Serve with rice.
