  1. Butter and line the base and sides of a round, loosebottomed 23cm cake tin with non-stick baking paper. Make the Easy vanilla cake batter (see 'Goes well with'), spread half of it into the tin, then mix half the berries into what is left. Spoon this over the first layer and smooth the top. Bake for 1 hr 30 mins; check with a skewer - it should come out clean.

  2. Cool for 30 mins, then remove from the tin and leave to cool on a wire rack. Once completely cold, put onto a plate, smooth the crème fraîche over and pile the remaining berries on the top. Dust with icing sugar, if using. The cake is best eaten fresh, but will keep in the fridge for up to 2 days; return to room temperature before topping with the cream and fruit and serving.

I made this cake last minute for a birthday yesterday and I can´t bake whatsoever :) It came out brilliant! Everybody loved it! I actually made one with blueberries and one with strawberries in the mix. The mix does need a bit longer than it says on the packaging (when you add fruit to it) so leave it in for an extra 10-15 min on 160C. I also added Vanilla sugar to the Créme Fraiche which made it even more delicious! Absolutely recommended!

I made this cake last night for a summer birthday cake/pudding and it looked amazing. Used exactly the ingredients but added both a vanilla pod and half a teaspoon of vanilla paste and it tasted superb. It also took 20 mins longer to cook at 140 but that might have been my fan assisted oven not being as efficient as it should be! So will preheat at 160 next time. I added red currants for decoration around the bottom of the cake with toasted almonds with icing sugar over the fruit on the top.... This is a really impressive looking cake which is light and moist and will definitely receive lots of compliments! Will be making this again for sure.

This is my second time round for this cake. I made it in January (I know NOT summer) and the fruit was tart, tasteless and expensive in Winter. Making this today for a party tomorrow and seems very apt given it is Jubilee weekend. I use a mix of strawberries, raspberries and blue berries. I don't like using creme fraiche as a sweet topping so I always use double cream. I frequently make more desserts than we can eat so I give portions away for people to take home with them or surprise a neighbour with home made cake which is a nice thing to do. xxx

Made this cake for my boyfriend's dad's birthday and it went down really well. I was looking for a cake that is lighter on the waistline as everyone has been dieting, and I was very glad to find this recipe! It was extremely light, airy and moist, the taste of the fruits came out really nicely and the whole cake was just brilliant! I have made many cakes from this website before but this is my ultimate favourite!!!

Made this on the weekend for a birthday, it was a huge success! Extremely moist cake, the topping brings out all the flavors beautifully! Cooking time and quantities are spot on! The lightest and moistest cake I have eaten/made in a long time!Definitely recommend it!!
