Ingredients
- 1 small red onion
- small pack coriander
- 125g cherry tomato (pomodorino if you can find them)
- ½ red pepper, deseeded
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 ½ tsp mild sweet paprika
- pinch of sugar
Method
- STEP 1
Put all the ingredients in a food processor and pulse until chopped, but not too fine. Pour into a serving bowl and add seasoning and a pinch of sugar.
