Ingredients

  • 1 small red onion
  • small pack coriander
  • 125g cherry tomato (pomodorino if you can find them)
  • ½ red pepper , deseeded
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 ½ tsp mild sweet paprika
  • pinch of sugar

Method

  • STEP 1

    Put all the ingredients in a food processor and pulse until chopped, but not too fine. Pour into a serving bowl and add seasoning and a pinch of sugar.
