  1. Heat oven to 220C/200C fan/gas 7. Tip the potatoes into a large shallow roasting tin and toss with 1 tsp olive oil and some seasoning. Roast for 20 mins until just starting to colour, then scatter over the lardons and return to the oven for 10 mins to crisp up.

  2. Remove the tin from the oven, push the potatoes and bacon to the sides and lay the salmon in the middle. Brush with remaining oil, season, then return to the oven and cook for 20 mins more until the salmon is just cooked through. Meanwhile, cook the peas in boiling water for 2 mins and drain.

  3. When the fish is cooked, lift it to a serving dish. Stir the peas and spring onions through the potatoes, drizzle with a splash of vinegar, stir through the mint and season to taste. Spoon around the salmon and serve.

Great dish! Very simple but really tasty, I have made this using white potatoes and sweet potatoes and both work really well. Easy go to recipe all year round.

Really love this - has become a weekly meal in our household. I 'throw in more green veg than just peas.

I tried this tonight but with trout as OH doesn't like salmon and sorry but was disappointed Not sure why but it wasn't to my taste nor my other half. Can't pinpoint why exactly as on paper ingredients bang on though I didn't think the mint vinegar was a good addition. Too overpowering for a fish that is best served I think without other ingredients masking it

Just to say that I made this with cod as the husband won't eat salmon - it was really tasty. I'd love to try with the salmon but can definitely experiment with other fish

This has become one of our go to recipes after a busy day with not a great deal of time to cook. As a tiny twist we use mint sauce instead of chopped mint and white wine vinegar and find it words better, although others might not agree.

Tried this for the first time today for a family lunch. Used individual salmon fillets and didn't have any mint but otherwise just as above. It was delicious. We ate it accompanied by French bread to mop up the juices. Next time i will slightly reduce the initial cooking time for the potatoes before adding the pancetta. I also reduced the temperature to 190 C as I was using a fan oven.

Yum yum, this was lovely! I made it for my husband and myself, so used approximately half the amounts of ingredients. I also added cherry tomatoes. We really enjoyed it and will definitely make it again.
