  1. Start by making up the sauce. Mix the ingredients together in a small bowl. Boil the noodles according to pack instructions. A minute before they are ready, tip in broccoli.

  2. Meanwhile, heat the oil in a wok until very hot, then stir-fry the beef for 2-3 mins until well browned. Tip in the sauce, give it a stir, let it simmer for a moment, then turn off the heat. Drain the noodles, stir into the beef and serve straight away, scattered with spring onions.

A very tasty + flavoursome meal! I did a variation of the recipe (from lack of ingredients) and also followed other people's advice to double the sauce (good tip). I didn't have oyster sauce so used extra soy sauce and cut up a mushroom; used Apple Cider Vinegar instead of white wine vinegar; leeks instead of spring onion; tomato puree instead of ketchup. Will definitely cook again.

Made this tonight and it was lovely, i did it with prawns and it really worked.

This is yum scrum - a great mid week dish that is really quick to throw together and great cold for lunch the next day. Do blanch the veg (I used broccoli, baby sweetcorn and mangetout) for a minute because then you just flash fry them with the dish to warm through. Great flavours - I left out the ketchup (too many nasties) and added half a diced red chilli. Add more if you like it really spicy.
