  • 8 large pork sausages
  • 2 garlic cloves, crushed
  • 400g can chopped tomato


  1. Heat oven to 220C/200C fan/gas 7. Place the onion, courgettes and red pepper in a baking dish, large enough to fit them in a single layer. Drizzle over 2 tbsp of the olive oil and season. Cook in the oven for 20 mins.

  2. Meanwhile, heat the remaining olive oil in a frying pan and cook the sausages for about 5 mins until lightly browned on all sides.

  3. Stir the garlic and chopped tomatoes into the veg, season again, then place the sausages on top and return to the oven to cook for a further 20 mins until the vegetables are tender.

I made this in the week, very easy weekday meal to make and it tastes great. I've made ratatouille before but especially liked this recipe because of the sausages which my children love. We eat ours with pasta and there was still a bit left for me to take to work for lunch the next day. This recipe is a keeper!

I just made this for tea tonight, was lovely and a perfect recipe. I added my own twist to it by wrapping bacon around the sausages and adding herbs and parsley :) yum yum yum!!

I just made this meal tonight. It was very easy to make and even easier to clean up. I would not say it is for four people unless you add a side to it like rice/pasta or potatoes. I will be making this recipe again with some small changes to it.

Lovely dish, full of flavour perfect for a cold wet day! Added spicy pork sausages to give it a real kick .

Really nice tasty dish, used butternut squash instead of courgettes as I didn't have any and chipolatas, served with rice, delicious!

Just had this for dinner , tasted great! i have added 1 yellow pepper and 2 more onions and some mushrooms will defenitely make it again! perhaps substitute the saugages with meatballs

Have made this and it is delicious. Also sprinkled a few herbs over it before putting it back in the oven. Very satisfying and filling, and shall make it again. Used pork sausages, but am also going to try it with good chicken sausages.
