This is so yummy! You do need to be patient as the Risotto absorbs the stock, it took about 45 mins for me on a medium heat but it was totally worth it. Served with salad and a grilled chicken breast for me and made my boyfriend pan fried tuna steak (marinated in olive oil, chili flakes, soy sauce and lemon juice for about half an hour). Delicious!

Made it and it is great and very quick! All of the ingredients are already in my usual supermarket in the amount required, so all I have to do is chuck them together. I put olives in last time. I did think the Parma ham was quite bland so i'm going to make it again and try it with Chorizo.

Tried this for the first time tonight and it literally took about 5 minutes to make! It's so yummy and very simple. I made some turkey meatballs to go with it which helps it be more filling and goes together perfectly. Will be making this again!

The "per serving" for nutrition is a bit vague. Does anybody know the portion size for any recipes on BBC Good food as too much or too little will obviously alter the calorie amount

Thanks for your question. We suggest splitting the recipe by the number of servings. So in this case, the calorie count is for half of the recipe. We do not include items listed as 'to serve' or 'optional' in our nutritional figures. We hope this helps.

Does the calorie amount not include the pasta?

Thanks for your question. This recipe is served with courgetti rather than pasta and that is included in the calorie count.
