  • 4 slices of Parma ham
  • ½ small pack basil

  • 350g tomato and mascarpone sauce
  • 250g pack courgetti

Method

  1. Roughly tear the ham and basil. Heat a frying pan over a medium heat and dry-fry the ham until crisp. Transfer to a plate with a slotted spoon. Add the sauce to the pan and cook for 1-2 mins, then toss in the courgetti. Cook for 1 min more until warmed through. Divide between bowls, then top with the ham and basil.

This is so yummy! You do need to be patient as the Risotto absorbs the stock, it took about 45 mins for me on a medium heat but it was totally worth it. Served with salad and a grilled chicken breast for me and made my boyfriend pan fried tuna steak (marinated in olive oil, chili flakes, soy sauce and lemon juice for about half an hour). Delicious!

Made it and it is great and very quick! All of the ingredients are already in my usual supermarket in the amount required, so all I have to do is chuck them together. I put olives in last time. I did think the Parma ham was quite bland so i'm going to make it again and try it with Chorizo.

Tried this for the first time tonight and it literally took about 5 minutes to make! It's so yummy and very simple. I made some turkey meatballs to go with it which helps it be more filling and goes together perfectly. Will be making this again!
