  • 12 slices of bread, half white, half brown
  • 300g soft cheese (use light if you prefer)
  • ½ cucumber, peeled and thinly sliced


  1. Spread the white bread and brown bread with some soft cheese. Season.

  2. Layer the cucumber on half the bread and sandwich with the other half of the slices. Trim the crusts, then cut each into 4 fingers.

For the wow factor, add some fresh, finely chopped mint to the soft cheese...

Stretch it further and reduce your calories/carbs - Take a rolling pin and roll out each slice of bread till they are at least half the size. Then make your sandwiches - much finer dining, and less cals/carbs too!

Slice the cucumber and salt it, leave it an hour and drain the water from it, that way you don't get soggy sandwiches.
