  1. Put the potato in a pan of salted water and bring to the boil. Add the cauliflower and boil both vegetables until tender. Meanwhile, heat the milk with the butter, thyme and cheese. When the veg is ready, drain well and blitz in a food processor.

  2. Gradually add the milk mixture (remove the thyme) until you get a smooth, thick purée. Season with salt, pepper and nutmeg. Serve with sausages, if you like.

Was looking forward to making this as we love cauliflower cheese but very disappointing. Far too much milk - I used probably half of the given quantity. Also, it tasted very bland and the taste of the thyme didn't come through at all. Not the sort of recipe we've come to expect from Barney!

I haven't tried this yet but I think I would not cook the cauliflower for as long as the potatoes and I agree that it sounds too much milk

Made this yesterday but reduced the milk by about half so it wasn't as sloppy, v tasty side dish

Made this and served with sausages, as suggested. Was quite nice, but a bit sloppy.
