Ingredients
- CAKE
- 225g self raising flour
- 225g caster sugar
- 225g butter
- 4 eggs
- 2 level teaspoons baking powder
- BUTTER ICING FILLING
- 175g icing sugar
- 75g butter
- few drops vanilla essence
- raspberry, strawberry or apricot jam
Method
- STEP 1Beat eggs in a bowl, ad caster sugar, flour (sieved), baking powder and butter. Mix together with hand mixer (only until mixture is blended)
- STEP 2Grease/line 2 x 7.5" or 8" baking cake tins. Bake in pre-heated oven at Gas Mark 4 for 25 minutes
- STEP 3When cakes are cooled, fill with icing & decorate as desired.
