My own fish pie recipe

Ingredients

  • Fish pie mix (tesco or similar - includes smoked haddock, cod or other white fish, and salmon)
  • Prawns
  • Leeks (to chop and surround fish in base of pie)
  • Milk
  • Butter
  • Flour (Make gravy paste but and milk instead of stock!)
  • Salt and pepper (to season sauce before goes ontop of fish)
  • Add bay leaf to sauce and pie when transfer sauce
  • Could add splash white wine to sauce
  • Potatoes to mash
  • Cheese to grate on top

Method

    1. Mix the leeks and fish/prawns together in the bottom of a pie dish/tray
    2. Prepare sauce, fry off butter, add flour to get a paste, add milk to make a medium thickness sauce, add bay leave and then season
    3. Pour sauce over fish
    4. Put thick layer of mash ontop (the bottom layer will mix with the sauce) and sprinkle with grated cheese
    5. Bake for 50mins or until cooked.

Well, I found the List of Ingredients a bit difficult to understand as it is in 'pidgin English' in parts. Was the recipe translated from another language e.g. Chinese ? Perhaps 'Mrs. C.' is short for 'Mrs. Chang'. Anyway ........it needs editing and a few corrections made as it's all a bit amateurish and not set out too well.
