A simple to make dish designed for vegetarians at a New Years Eve Party

  • 3 mixed peppers - Red, Yellow & Green
  • 1 tbsp olive oil
  • 2 tortilla wraps
  • 2 tpsp jalapeno humous


    1. Pre-heat the oven to 180C/fan 160C/gas 6. Slice the peppers and coat them in the olive oil in a non-stick baking tray. Roast in the oven for approximately 25 mins or until the edges start to curl and blacken.
    2. Once cooled slightly, place spoonfuls of the mixture in the centre the wraps, and top with a spoonful of humous. Roll up and serve!
