Roasted Pepper Humous Wraps

A simple to make dish designed for vegetarians at a New Years Eve Party
- 3 mixed peppers - Red, Yellow & Green
- 1 tbsp olive oil
- 2 tortilla wraps
- 2 tpsp jalapeno humous
- Pre-heat the oven to 180C/fan 160C/gas 6. Slice the peppers and coat them in the olive oil in a non-stick baking tray. Roast in the oven for approximately 25 mins or until the edges start to curl and blacken.
- Once cooled slightly, place spoonfuls of the mixture in the centre the wraps, and top with a spoonful of humous. Roll up and serve!
