chicken and cashew stir fry

Ingredients
- 4 chicken breasts ,diced
- 2 carrots,cut in to strips
- 1 green pepper,cut into strips
- 15oz can of pineapple chunks
- 2 tbls peanut oil
- 8oz tin of waterchestnuts
- 4oz cashew nuts
- 2 tbls dark soy sauce
- 2 tbls dry sherry
- 1 tbls malt vinegar
- 1 tbls corn flour
- 1/2 tsp ground ginger

Method
- STEP 1cut chicken,carrots and green pepper into 1cm strips.drain pineapple and reserve juice.
- STEP 2heat the peanut oil and fry the chicken for 5 mins then add carrot,pepper,pineapple,waterchestnuts and cashew nuts.stir fry for 5 mins.
- STEP 3mix together soy sauce,sherry,vinegar and pineapple juice.blend in cornflour and ginger.pour the sauce over meat and vegetables,bring to the boil,stirring until thickened.
- STEP 4cover and simmer for about 10mins.season with salt and pepper and serve with rice or noodles.
