potato cakes with rashers

Some tasty traditional potato cakes with some bacon and even a sauce, it also is great for a family lunch!

Ingredients

  • 420g mashed potato
  • 150g plain flour
  • 50g butter
  • big pinch salt
  • 6 rashers bacon
  • For the sauce
  • 4 tbsp mayonnaise
  • juice 1 lemon

Method

    1. Whizz the mashed potato and flour together until it feels like breadcrumbs. then do the same with the butter and salt
    2. then try to make into a big ball and roll until 10 mm thick
    3. Next grill the rashers until it's nicely brown, meanwhile cut the potato mixture into triangular strips
    4. after that you can get a frying pan on with a bit of butter and vegetable oil, then plop the potato cakes on
    5. when the potato cakes are medium brown do the same with the other side and then scrape onto a serving plate and do the same with the bacon
    6. finally to make the sauce just whisk the mayonnaise with the lemon juice until fully combined and serve with the potato cakes and bacon
