Ingredients

  • 420g mashed potato
  • 150g plain flour
  • 50g butter
  • big pinch salt
  • 6 rashers bacon

For the sauce

  • 4 tbsp mayonnaise
  • juice 1 lemon

Method

  • STEP 1
    Whizz the mashed potato and flour together until it feels like breadcrumbs. then do the same with the butter and salt
  • STEP 2
    then try to make into a big ball and roll until 10 mm thick
  • STEP 3
    Next grill the rashers until it's nicely brown, meanwhile cut the potato mixture into triangular strips
  • STEP 4
    after that you can get a frying pan on with a bit of butter and vegetable oil, then plop the potato cakes on
  • STEP 5
    when the potato cakes are medium brown do the same with the other side and then scrape onto a serving plate and do the same with the bacon
  • STEP 6
    finally to make the sauce just whisk the mayonnaise with the lemon juice until fully combined and serve with the potato cakes and bacon
