potato cakes with rashers

Ingredients
- 420g mashed potato
- 150g plain flour
- 50g butter
- big pinch salt
- 6 rashers bacon
For the sauce
- 4 tbsp mayonnaise
- juice 1 lemon
Method
- STEP 1Whizz the mashed potato and flour together until it feels like breadcrumbs. then do the same with the butter and salt
- STEP 2then try to make into a big ball and roll until 10 mm thick
- STEP 3Next grill the rashers until it's nicely brown, meanwhile cut the potato mixture into triangular strips
- STEP 4after that you can get a frying pan on with a bit of butter and vegetable oil, then plop the potato cakes on
- STEP 5when the potato cakes are medium brown do the same with the other side and then scrape onto a serving plate and do the same with the bacon
- STEP 6finally to make the sauce just whisk the mayonnaise with the lemon juice until fully combined and serve with the potato cakes and bacon
