Ingredients

  • 1 large onion, chopped
  • 4 large garlic cloves, mined
  • chopped red chillies (use however many you can handle but a minimum of 2 is needed or else dont do chilli!)
  • 500g beef mince
  • 1 tin tomatoes
  • 1tbsp tomato puree
  • 1 heaped tsp ground cumin
  • 1 heaped tsp ground corriander
  • sprinkling cayenne pepper (again, however much you think you can handle)
  • 2-4 squares 80% cocoa dark chocolate
  • 3/4 can lager
  • basmati rice
  • seasoning
  • a little oil

Method

  • STEP 1
    Add the onions to the oil and fry off until translucent and starting to soften. Add the chilli and garlic and fry for a minute or so. Add the beef and brown. Then add all remaining ingredients except the chocolate (and obviousely the rice). Season and cook down until the sauce has thickened. Taste to check the seasoning and if it is hot enough or has enough spices for you. If you want to add more, add a little at a time and cook through for 5 mins or so. When you have the desired heat etc, add 1 square of chocolate at a time. It will melt through quickly, and taste after each square. It will add a depth of flavour which you cannot replicate with anything else. You dont want to taste the chocolate. I have found that 2-3 sqares is enough.
  • STEP 2
    For the rice, rinse through well with cold water in a sieve. Put in boiling salted water and stir only once. Leave to cook as per packet instrutcions. Serve with the chilli and some tortilla chips.
