This is a great, easy, tasty soup to make for any time of year

Ingredients

  • 3 large leeks, chopped
  • 2 large potatoes, peeled and chopped
  • 1 onion, chopped
  • Chicken stock
  • Seasoning
  • Cream

Method

    Add the potatoes, leeks and onion to a stock pot ans cover with the hot stock by about 2 inches. Cook until the potatoes are tender and liquidize in a blender or food processor. Season to taste and mix in a little cream for richness, you dont need a lot. Serve with crusty bread.

Just made this but added a small green chilli finely chopped, gave just a little kick to the soup.
