Rijst met kip, ananas, courgette en cashewnoten

  • 400 g kipfilet
  • 1 kleine courgette
  • 2 uien
  • 1 klein blikje ananas op sap
  • 2 el olijfolie
  • 2 teentjes knoflook
  • 1/2 tl paprikapoeder
  • 1/2 tl kerriepoeder
  • 1 1/2 dl warme kippenbouillon
  • 125 ml creme fraiche
  • zout en peper
  • 50 g cashewnoten
  • 1 handje gewelde gele rozijnen


    1. Snijd de kipfilet en de courgette in blokjes. Snijd de uiten in dunne ringen. Laat de ananas uitlekken en snijd de ringen in stukken
    2. Verhit de olijfolie in een pan en bak hiering de kipbloktjes op hoog vuur in 3 min.
    3. Voeg de courgette, uien, de uitgeperste teentjes knoflook, paprikapoeder, kerriepoeder en zout en peper toe. Roerbak alles in 2 min.
    4. Voeg de kippenbouillon toe en laat het gerecht 25 min stoven.
    5. Roer voor het serveren de creme fraiche door het stoofpotje en voeg de stukjes ananas, noten en rozijnen toe.
