cream cheese berry blondie

Serves 12cute, yummy alternative to a cheesecake or brownie very gooey and delicious!

Ingredients
- 9 tablespoons of lightly salted butter
- 1 2/3 cups of plain flour
- 1 tsp salt
- 1 tsp baking powder
- 1 cup caster sugar
- 3 large eggs
- 1 1/2 tsp vanilla extract
- 170g soft cheese
- 3/4 cup melted white chocolate
- 3/4 small pieces of chopped strawberrys
- 5 tbsp of seedless strawberry jam
Method
- Preheat the oven to 160C/fan 140C/gas 3 and grease an average size brownie tin. In a large bowl, whisk together the flour, baking soda and salt
- In a separate bowl whisk the butter till smooth with an electric whisk, then whisk in the sugar, then the cream cheese till completely combined
- Whisk in the eggs and vanilla extract till completely combined
- Gradually pour the wet mixture into the flour mixture, whisking after each addition and beat. Once combined, whisk in the chocolate. Then whisk with an electric whisk to ensure everything is completely combined and a smoother texture is achieved
- Tip the mixture into the prepared brownie tin, then evenly stir in the strawberrys with a teaspoon to get an even distribution with in the mixture. Melt the strawberry jam till runny then scatter over the brownie mixture in a zig zag motion. Finally, Then with a table knife or wooden skewer, swirl the jam to form a nice pattern
- Stick into the preheated oven and bake for 40-45 minutes, allow to cool for at least 15 minutes before serving
