Ingredients

  • 50 Gram Pudding rice (2 oz)
  • 3 Eggs, beaten
  • 50 Gram Sugar (2 oz)
  • 1/2 Teaspoon Vanilla essence
  • 600 ml Milk (1 pint)
  • 40 Gram Sultanas (1 1/2 oz)
  • Pinch Ground nutmeg

Method

    1. Cook the rice in boiling water for 10 minutes, drain well.
    2. Beat the eggs, sugar, essence and milk together. Add the sultanas and rice.
    3. Pour into an ovenproof dish. Sprinkle with grated nutmeg.
    4. Stand in a baking dish containing enough hot water to come halfway up the sides of the dish. Bake at 170 °C / 325 °F / Gas 3 for 1 1/2 hours or until just set
