  1. Heat the oil in a large, wide pan with a lid, add the chicken, then fry quickly until lightly coloured. Add the onion and ginger, then fry for a further 2 mins.

  2. Add 150ml water, the saffron, honey and carrots, season, then stir well. Bring to the boil, cover tightly, then simmer for 30 mins until the chicken is tender. Uncover and increase the heat for about 5 mins to reduce the sauce a little. Sprinkle with parsley and serve with lemon wedges for squeezing over.

One of my faves. Have cooked this countless times. Really easy to rustle up quickly, which more complicated tagines are not. I serve it with couscous with sultanas and toasted flaked almonds.

Super, quick, easy evening meal. I made for tea last night, only addition was a good shake of Ras-el-hanout added with the tumeric (didn't have any safron). I Served it with cous cous to which I had added a couple of chopped dried appricots, a handful of raisins, a handful of toasted pine nuts and a load of chopped fresh corriander. Was thoroughly enjoyed by all.

Nice taste to the chicken and carrots, but would have preferred more sauce. Took a bit longer than the time stated. Will try again with raisins, cinnamon and some garlic - prob add some veg stock as well to give more sauce.

haven't done much cooking recently, so was delighted to find this. Just got some new cookware coated in non-stick titanium, and the chicken was just so tender ... will definitely do this one again!!

This is amazing, the whole family love it. The only thing I added extra was some dried apricot halves and then served it with lemon & coriander cous cous.
