A good caramel sauce for ice-cream.

Ingredients

  • 165ml double cream
  • 1 vanilla pod
  • A large pinch of sea salt
  • 90g demerara sugar
  • 70g white caster sugar
  • 120g butter

Method

    1. Bring the cream, vanilla and salt to the boil. Take off the heat and leave to infuse for 10 mins.
    2. Mix the two sugars. Place a pan over a medium heat and pour in the sugar slowly until it caramelises.
    3. Reduce the heat and slowly add the cream, stirring gently all the time.
    4. Add the butter and stir.
    5. Serve warm over ice-cream.

I am the worst cook ever and have never in my life made any form of sauce apart from burnt sugar, however following this recepie I have just made the most amazing sauce!!

Great recipe, served this lastnight over cream pots and it was lovely!! Simple, quick and very tasty!!!
