Ingredients

  • 12 cleaned scallops
  • 4 bacon rashers
  • balsemic vinegar
  • 100 gr spinach
  • 50 gr rocket
  • 50 gr cremefraiche
  • milk

Method

  • STEP 1
    cut the rasher and panfry till crisp- leave to cool on kitchen towel
  • STEP 2
    liquidize spinach , rocket , cremefraiche and add milk to get correct consistency-sligjtly runny
  • STEP 3
    sear scallops on high heta for 2 min each side
  • STEP 4
    serve scallops on plate-top with bacon- drizzle with balsemic. On side of plate make a large "tear" with liquidized spinach. Serve at once possibly with some rustic toasted bread (optional)
