Ingredients

  • 3-4 medium size tomatoes
  • 1 red onion
  • 1 lime, juiced (and zest)
  • 3 tbsp of red wine vinegar
  • 2 tbsp of olive oil
  • 1 tbsp of tomatoe pure
  • 1 spring of mint

Method

  • STEP 1
    chop the tomatoes and red onion in to chunks and put into a blender with the rest of the ingredients. pulse to desired consistency, but not liquidised.
  • STEP 2
    goes well with salmon, steak and burgers.
  • STEP 3
    can be chilled up to 4 days
  • STEP 4
    serve at room temperature
