Ingredients
- 3-4 medium size tomatoes
- 1 red onion
- 1 lime, juiced (and zest)
- 3 tbsp of red wine vinegar
- 2 tbsp of olive oil
- 1 tbsp of tomatoe pure
- 1 spring of mint
Method
- STEP 1chop the tomatoes and red onion in to chunks and put into a blender with the rest of the ingredients. pulse to desired consistency, but not liquidised.
- STEP 2goes well with salmon, steak and burgers.
- STEP 3can be chilled up to 4 days
- STEP 4serve at room temperature
