Creamy Celery and Potato Soup

Ingredients

  • 25g butter
  • 5 celery sticks, chopped, leaves reserved
  • 100g potatoes, peeled and chopped
  • 1 leek, trimmed and sliced
  • 700ml vegetable stock
  • 1 bay leaf
  • 300ml semi-skimmed milk
  • salt and freshly ground black pepper

Method

    1. Melt the butter in a large saucepan over a low heat. Add the celery, potatoes and leeks and cook gently for 5 minutes.
    2. Pour the stock into the pan and add the bay leaf. Bring to the boil, then reduce the heat, cover and simmer for 20 minutes or until all the vegetables are tender. Remove the bay leaf.
    3. Cool slightly. Using a draining spoon, lift out the vegetables and put them into a blender or food processor with some of the liquid. Whizz to a purée.
    4. Return the purée to the pan with the rest of the liquid, add the milk and heat gently. Season to taste with salt and pepper.
    5. Ladle the soup into warm bowls and grind a little more pepper over the top. Scatter over the chopped celery leaves to garnish.

Agree with less stock/liquid being added. I didn't have a leek so just did some shallots and garlic first before adding in the potato (I did more than 100g to compensate for no leek) and the celery. Also added a little fresh coriander and it worked pretty well - would recommend!

My family really do not like celery but this soup went down really well, even with my teenage son. definitely be making this again : ). I did add in extra potatoes and that helped thicken it up.

Delicious & easy. Was looking for a no hassle receipe to use up some stray celery & this was perfect. Very smooth + creamy, yet no cream! Husband loved it, will defo make again. Agree with other comments though that 700ml + 300ml liquid too much for amount of vegetables. Add more vegetables or reduce the liquid.

Very lovely soup. Next time I would reduce the amount of stock added back at the end to make it slightly thicker.
