An all-in-one slowcooker recipe for a delicious French cassoulet

  • 450g chicken thighs (skinned and boned)
  • 300ml double cream
  • 4 cloves garlic, chopped finely
  • 12 shallots, whole
  • 250ml white wine
  • 25g butter
  • 300g chantenay carrots
  • 2 rashers smoked bacon, chopped
  • 8-10 sprigs thyme
  • 400g tin cannellini beans, drained and rinsed
  • Salt and pepper
  • Roasted baby new potatoes, to serve
  • Steamed greens, to serve


    1. Place all the ingredients into the slow cooker
    2. Put on the lid
    3. Cook for up to 5 hours on high, stirring at 30 minute intervals
    4. Serve with roasted baby new potatoes and steamed greens

Excellent and simple, pack with flavour. Will definitely make this again. We could do with more slow cooker recipes for slow cooker lovers. Well done Helen.
