Print Ingredients Method Ingredients1 tbspn Vegetable oilI onion, sliced2 medium leeks8 oz potato, cubed1.2 litres vegetable stock5 fl oz double creamSalt and pepper MethodPut the oil in a large saucepan and fry all the vegetables until starting to soften.Add the stock, bring to the boil then simmer gently until the vegetables are soft, about 20 mins.Blend well until smooth, add the cream, season and serve.
