Delightful and easy Pork sausage casserole with apple and cider

  • 8 Pork sausages
  • 2 medium red onions, chopped
  • Stick of celery, chopped
  • 1yellow pepper, sliced
  • 1 red pepper, sliced
  • 2 small apples
  • 300 mm vegetable stock
  • 400 mm cider or white wine
  • 2 medium tomatoes, chopped
  • Tbsp Worcester sauce
  • Par boiled potatoes, if desired.
  • 2 Tbsp virgin oil


    1. Fry the onions, peppers and celery in 1tbsp oil until soft
    2. Add the sausages and remainder of oil and fry until browned.
    3. Add all ingredients into a casserole dish, except the apple and tomatoes and potatoes and oven bake for 45 minutes
    4. Add tomatoes, sliced apple and if desired par boiled potatoes and bake or a further 30 minutes
