A light healthy way to enjoy your fish fingers

Ingredients

  • 6 fish fingers
  • 2 tomatoes
  • 10 pitted green olives
  • 3 cloves of garlic
  • 20g onion flakes
  • 5 spring onions
  • 1 yellow pepper
  • Two handfuls of rocket leaves
  • Four handfuls of mixed leaves
  • Sweet chilli sauce

Method

    1. Pre heat oven at 200oC and cook fish fingers for 15-18 minutes until crispy brown
    2. Halve olives, slice garlic, tomatoes and peppers, chop spring onions
    3. Toss leaves and salad ingredients together and arrange on dish
    4. Slice fish fingers and arrange on salad
    5. Sprinkle on onion flakes and dress with sweet chilli sauce

This recipe is quick, easy, and affordable whilst not sacrificing even the slightest on taste! It's commonly said that salads can often be boring and unfulfilling, but recipes like this prove that misconception wrong. The combination of sweet chili sauce, garlic and spring onions is reminiscent of Thai Flavors, and the rocket and olives add a Mediterranean flare. The dish is refreshingly light, but also heartily satisfying -- and that is a unique balance to accomplish.
