Chicken Enchiladas Straight Out Of The Twilight World.

  • 2 tbsp Oil
  • 1 Clove Of Garlic, Sliced
  • 1 Medium Red Onion, Finely Diced
  • 3 Chicken Breasts, Chopped
  • 1 Green Chilli, Finely Sliced
  • 1 Small Green Pepper, Sliced
  • 1 tbsp Cumin
  • 3/4 tsp Chilli Powder
  • 1 Jar Of Enchiladas Sauce
  • 200g Can Of Chopped Tomatoes
  • 6 Tortilla Wraps


    1. Heat the oil in the pan. Add the garlic and onion to the pan and fry for a few minuets. Then add the chicken and fry till it turns white.
    2. Tip in the chilli, pepper, cumin, chilli powder, enchilada sauce and tomatoes and simmer for 15 minuets.
    3. Brush inside of tortilla with two tablespoons of the sauce and roll up the tortilla. Next, place the tortilla roll, in a baking dish and pour the remaining sauce over the tortilla mixture. Bake 20 to 25 minutes in the oven at gas mark 4.
