  • 400g penne (or other tube shape) pasta
  • 250g pack chestnut or button mushrooms, wiped clean

  • 4 tbsp pesto (fresh from the chiller cabinet if possible)

  • 200ml carton 50% fat crème fraîche
  • handful basil leaves

Method

  1. Cook the pasta in boiling water in a large non-stick saucepan according to pack instructions. Meanwhile, slice the mushrooms and snip the bacon into bite-size pieces with scissors or a sharp knife.

  2. Reserve a few drops of the cooking water in a cup or bowl, then drain the pasta and set aside. Fry the bacon and mushrooms in the same pan until golden, about 5 mins. Keep the heat high so the mushrooms fry in the bacon fat, rather than sweat.

  3. Tip the pasta and reserved water back into the pan and stir over the heat for 1 min. Take the pan off the heat, spoon in the pesto and crème fraîche and most of the basil and stir to combine. Sprinkle with the remaining basil to serve.

An easy recipe and one that can be adjusted depending on what needs using up! I always use a chopped onion and a couple of garlic cloves at the start and add a splash of white wine if there's an opened bottle about the kitchen. Sometimes use up any cooked chicken and a few sliced peppers and always add halved olives and halved cherry tomatoes in the last minute. Adding a handful of baby spinach at the end is also very tasty. Always a splash of lemon juice but only usually a tbsp of creme fraiche. Still tastes nice and creamy but less calories. Don't think I've ever made it the same twice!!

We really liked this although I didn’t use any pesto as I hate the Parmesan taste. Just used extra mushrooms and halved cherry tomatoes. I cooked the bacon and mushrooms separately so that the bacon didn’t go soggy. Topped with a good sprinkle of cheese.

Nice, simple supper dish. I didn't have creme fraiche, so used a couple of tablespoons of sour cream instead. I also added some tiny ripe tomatoes from the garden in with the pesto. Definitely will make again, my husband loved it.

Absolutely gorgeous. Easy to do. The mushrooms were lovely in it. I used smoked back bacon which not only tasted lovely but smelt fantastic. Can't wait to do it again. My husband said 'Yummy'.

Fantastic flavours from the fresh herbs and pesto. Quick and easy to make. Served mine with garlic bread and swapped the creme fraiche for around 40g of half fat cream cheese which seemed to work well to add some creaminess without overpowering the other flavours. Overall a must try recipe.

Easy to make and tasty, I'd suggest a little less pesto as can be quite over powering. I'll definately be making this again soon.
