  1. Cook the quinoa following pack instructions – it should be tender but with a little bite. Drain well and spread over a platter or wide, shallow bowl to cool quickly and steam dry.

  2. When the quinoa is just about cool stir through all of the remaining ingredients with plenty of seasoning.

This was great and straightforward - I made it for a barbecue and it was very popular. Also works well for lunch the next day. Word of warning: be careful using frozen pomegranate seeds (as I did, for the first time) - even rinsed and drained they turned the quinoa a bit pink :)

This is a delicious summer salad, I did it without the coriander due to bad shopping but it was still spot on. BBQ for 5 adults this salad was way more than enough so would recommend halving the recipe although looking forward to the leftovers for tomorrow's lunch! Very zesty I put half a teaspoon more sugar and used Demerara sugar which counterbalanced the lemon fabulously.

I made this today and loved it. I will definitely make this recipe again. Perfect for a summer's day. I made salmon to go with it and it was a hit.

Made just as the recipie bar the pomegranate and used a white, black & red quinoa mix cooked according to the packet. Perfect. Enjoyed by whole family. No leftovers though :(

I found this dish a bit to tangy even though I added way less lemon juice. Other than that it's ok but nothing special won't be making this again

Easy simple delish recipe. I used black quinoa and reduced everything to two servings taken into consideration on others comment on the lemon juice. Repeat: delish!

I enjoyed this very much, however, I think 300g of uncooked quinoa was rather a lot once cooked, even for 4 servings. I had such a lot I had to use my cake mixing bowl to put it in as I didn't have anything else big enough, and it filled it practically to the top. I felt the rest of the ingredients were somewhat "lost" in the expanse of quinoa!

To keep your quinoa al-dente, I'd recommend simmering gently for 10 mins, then leave to stand with the lid on for 5-6 minutes instead. Good easy-cook quinoa method here www.lovequinoarecipes.com. Will definitely make again.
