Tuna and Bean Salad

Ingredients
- 1 can (185g)of Tuna in brine or water
- 1 can (400g) Mixed Bean Salad - I use Napoli
- 1 small can (198g) Sweetcorn in water
- 1 large carrot grated
- 8-10 cherry tomatoes cut in quarters
- 75g chopped cucumber
- 4 spring onions chopped
- handful of fresh coriander chopped
- Good squeeze of Lemon
- Seasoning
Method
- STEP 1Drain Tuna. Drain Sweetcorn, drain and rinse Mixed Bean Salad. Combine all ingredients in a bowl and season well.
- STEP 2Serve alongside a Jacket Potato if using.
