Serves 3A quick, healthy and filling salad, great served with a jacket potato for a main course.

Ingredients
- 1 can (185g)of Tuna in brine or water
- 1 can (400g) Mixed Bean Salad - I use Napoli
- 1 small can (198g) Sweetcorn in water
- 1 large carrot grated
- 8-10 cherry tomatoes cut in quarters
- 75g chopped cucumber
- 4 spring onions chopped
- handful of fresh coriander chopped
- Good squeeze of Lemon
- Seasoning
