Easy tasty banana and chocolate cake

Ingredients

  • 125g butter
  • 150g caster sugar
  • 1 tsp vanilla extract
  • 1 egg, beaten
  • 3 bananas, mashed
  • 100g chocolate chips, white or milk are best
  • 190g self raising flour
  • 60ml milk

Method

    1. Grease and line a 2lb loaf tin. Melt butter, sugar and vanilla in a saucepan over a medium heat.
    2. Remove from heat and add the mashed bananas, mix well.
    3. Add the egg, mix well.
    4. Stir in the flour and the milk. Once combined add the chocolate chips.
    5. Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunch topping if liked.
    6. Bake at 150 C fan oven (or 170 C regular, Gas mark 3) for 45 mins, until a skewer comes out clean. Leave to cool and enjoy

I followed the recipe exactly, and ended up having to cook it for an extra 45 minutes longer than stated but it was still not quite cooked on the inside even though the outside was slightly overdone. It was still tasty just shame it took so long.

Really nice cake and easy to follow recipe. Have not made such a wet recipe before and was a bit concerned but read the other comments about baking for a bit longer than it advises and it came out really well. Going to try as muffins next time.

I have been on this site for ages and never felt compelled to comment before but this is an amazing recipe. Haven't made a cake in this way before and it was a wet mixture so I wasn't sure it would work but I stuck with it and was beautiful. As others have said it takes longer to bake, over an hour but well worth the wait.

Can anyone please tell me what size the bananas need to be? Like small, medium, large? Or give me an idea in weight, 100g? 200g? Thank you

I just used 3 bananas which were getting a bit beyond just eating. They were not the really big ones but just average size and it worked a treat. Bearing in mind there was only one egg in the mixture it rose up really well. I didn't put all the milk in as the batter was quite runny anyway, probably about half the mik.

Fantastic recipe. Though the loaf was super tasty! Timings are a bit out though. I had it in for 1hr5 and it was still slightly underdone when i cut into it. I would suggest 1hr- 1hr15 cooking time.
