Simple Spanish Chicken with Chorizo and New Potatoes.

  • 1 tbsp olive oil
  • 4 chicken thighs, with or without bones or skin (you can also use chicken breasts)
  • 150g chorizo sausages, whole if baby ones or in 4cm chunks
  • 350g halved new potatoes
  • 1 red onion, roughly chopped
  • 1tsp dried oregano
  • grated zest of 1/2 orange


    1. Pre heat the oven to 220C/Gas Mark 7.
    2. Put the olive oil in the bottom of a shallow roasting tin. Rub the chicken in the oil.
    3. Add the chorizo and potatoes.
    4. Sprinkle the onion, oregano and orange zest.
    5. Cook for 1 hour, basting halfway through.

This recipe is originally from the wonderful Nigella and looked so delicious in the book I thought id give it a go as I had friends coming round! Easy and absoloutly gorgeous! I made a few changes to the original recipe as follows.... Set the oven at 200 degrees cel I used 2 x tbsp garlic olive oil The butcher didnt have chicken thighs so just used breasts Added 2 crushed garlic cloves 2 red onions Didnt have oregano so used basil and thyme and plenty of seasoning of salt and pepper When all ingrediants were in roasting dish I made sure everything was coated in oil so in true nigella style used my hands to mix it all together! I also made sure I gave the mixture a stir every 20 mins to prevent the mixture burning/sticking to the bottom of dish! I added the chorizo 15 minutes into the cooking So easy to make, I loved it, my friends loved it, perfect for a dinner party as you can prepare before and leave in fridge, cant wait to make it again!!!!

I added pitted black olives, and tomatoes off the vine. Potatoes took to long to cook, so I quickly microwaved them 3 mins and returned them to the main dish, and cooked for another 5 mins in the oven. The orange flavour was fab. Served with ciabatta bread to mope up those lovely juices. A great hot buffet dish, and so easy.
