Ingredients

  • 1-2tbsp oil
  • 2 chicken breasts chopped
  • 2 chorizo sausages sliced
  • 1 large onion
  • 3 garlic cloves crushed
  • 1 red pepper sliced
  • 2tsp paprika
  • 200g paella rice
  • 750mls chicken stock

Method

  • STEP 1
    Fry chicken pieces until browned. Remove from pan.
  • STEP 2
    Fry chorizo until crisp. Add the onions and garlic to the pan and cook until soft. Add the red pepper and paprika.
  • STEP 3
    Return the chicken to the pan and add stock. Simmer for 20-25 minutes or until tender.
  • STEP 4
    Add the rice to the pan, cover and place in the oven. Cook for 30mins.
