Method

  1. Cook the couscous or bulgur wheat in vegetable stock according to pack instructions. Trim the ends off the courgettes, then cut into slices.

  2. Heat a griddle pan or grill. Drizzle the courgette slices with oil, then season. Cook for 2 mins, then turn over and cook 1-2 mins more until softened and golden brown. Tip into a large bowl along with the cooked couscous or bulgur wheat, then mix through the remaining ingredients. Serve at room temperature.

Inspired by all the good reviews I made this with bulgur wheat but used only half the amount specified in the recipe as I wanted a richer dish. Drizzled more olive oil on at the end and served it warm with falafel and a rocket and Parmesan salad. It was gorgeous. I did it to use up some bulgur wheat but will now have to buy some more to make it again!

Great recipe for a packed lunch and no doubt a great accompaniment for a BBQ or alfresco dining of any variety. I had to substitute the courgette with asparagus on this occasion so I’m looking forward to making it again to see what difference it makes; plus I’m keen to add some red peppers to the griddle pan as a few others suggest. I think the sweetness would offer a better all round flavour alongside the saltiness of the feta and tang of lemon. I added some baby plum tomatoes which needed using up; the colour made it all the more easy on the eye. As it became a bit dry after a night in the fridge, I drizzled some extra virgin olive oil over but you could possibly add pesto. All in all, very quick to prepare and so versatile.

So yummy! And can easily be made vegan if you substitute the feta for a vegan version!

I was soo pleasantly surprised by how good this was! Saving this one. Ate it as my main and it was delicious and filling. Didn't make any ingredients changes, it's perfect as is. (I used bulghar wheat cause it's what I had on hand) The only thing I did differently was to bake the courgette slices in the oven (after they'd been drizzled with olive oil and seasoned in a large bowl) because my pan was too small which meant it would take too much time on the stove.

Ate this warm for tea (served 2 as a healthy-eating sized main) and then took it to work for two lunches and ate cold. Absolutely delicious, super-easy to make and reasonably healthy to boot. Excellent.

I didn't have enough courgettes, so I took what I had in the fridge - 1 zucchini, asparagus and a small broccoli. Turned out very well.

Are you sure nutrition data is correct? This doesn't look like a 0gr Carbs salad to me..

i made it to day for my children. I doubled the ingredients because i have a big family. We all loved it, so tasty and easy to make. The leftovers will be in their lunch boxes tomorrow.
