Sweet and simple, vanilla fudge cakey goodness!

Ingredients

  • 300g Self Raising Flour
  • 150g Fudge Chunks
  • 115g Sugar
  • 1.5 tsp Baking Powder
  • 125ml Milk
  • 100ml Creme Fraiche
  • 1tsp Vanilla Extract
  • 1 Egg
  • 60g Melted Butter

Method

    1. Preheat the oven to 170-190C (Fan ovens prefer the lower temp, normal ovens the higher one).
    2. Add the flour, baking powder, sugar and fudge chunks together and mix well (flour can be sieved before if preferred, I find mixing the dry ingredients well together gets rid of any lumps instead).
    3. Melt the butter and let it cool.
    4. Whisk together the milk, creme fraiche, vanilla essence and egg together. It should form a thick, creamy mixture.
    5. Add the cooled down, melted butter to the creamy mixture and whisk well.
    6. Add the flour mixture to the creamy mixture and stir well with a metal spoon.
    7. Split the mixture into 12 muffin cases and bake for 20 mins or until golden brown. Remove from oven and leave to cool.

Followed the method, but moment of doubt came when mixing the liquid element. Despite whisking for some time, the liquid did not faintly resemble cream, but retained the consistency of milk. Ploughed ahead regardless, and it seemed ok in the end. When adding the dry ingredients, the batter was just on the dough-y side of "dropping". Next time, I would perhaps hold back slightly on the flour. The end result tasted lovely, but as with the batter, was slightly doughier than anticipated. Have given a 4* rating - slightly on the generous side, but nothing wrong with the recipe that a few minor tweaks wouldn't fix!
