Easy Italian Lentil Soup

A warming, filling vegetarian soup, great in winter, wonderful comfort food.

  • 1 tbsp olive oil
  • 1 white onion
  • 280g uncooked red lentils
  • 1l stock
  • 250ml red wine
  • 1 bay leaf
  • 1 tsp each of thyme, nutmeg and mixed herbs
  • 25g brown sugar
  • 1 tbsp cornflour (optional)
  • dash of lemon juice
  • salt and pepper to taste


    1. Soften the onion in the oil.
    2. Add the lentils, stock, wine and herbs.
    3. Bring to a boil, simmer and cover, stirring occasionally.
    4. After 10 minutes add the sugar and cornflour.
    5. Cook until the lentils are soft, add the lemon juice and season according to taste.
    6. Optionally blend to desired consistency.
    7. Serve hot with crusty bread.

I made this soup last week, and it turned out beautiful! Makes for a hearty cup of soup or a lighter Italian alternative to your usual pasta and pizza :D I posted mine up on my food blog here: Had to use brown lentils instead of red ones :P
