Fluffy Jamaican dumplings

- For deep fried dumplings, place on kitchen roll straight from the pan to reduce excess oil.

Ingredients
- 1 mug s/r flour
- 1/4 mug polenta (otherwise known as Jamaican porridge)
- Pinch salt
- Sprinkle black pepper
- 1-2 tablespoons water

Method
- STEP 1Sieve s/r flour, add into a bowl
- STEP 2Sieve polenta, add to bowl of flour
- STEP 3Add pinch of salt and sprinkle of black pepper
- STEP 4Mix together gently with fingertips
- STEP 5Add 1 tbsp water and blend in with hands until a smooth dough (not too sticky) add a second tbsp if needed
- STEP 6Knead dough and then pinch off a small amount and roll into a ball shape approx size of satsuma
- STEP 7Take each dough ball and immerse into liquid (either boil, or casserole, stew etc) for 15 mins
- STEP 8You could also deep fry until golden brown. Test these by sticking in a fork through the middle and if it comes out clean they are readyto devour.
