
White Choc & Raisin Cookies

Serves 1 - 12 CookiesDelicious healthy cookies to pop in the kids packed lunch/ or enjoy (as my other half did) with a nice cup of tea in front of the tv!!!

Ingredients
- Ingredients:
- 2/3 cup butter or margarine, softened
- 2/3 cup brown sugar
- 2 medium eggs
- 1 1/2 cups oatbran
- 1 1/2 cups plain flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup of raisins
- 2/3 cup white chocolate chunks or chips
Method
- Beat butter or margarine and brown sugar together in a mixing bowl until light and fluffy
- Add the two eggs and mix well
- In a separate bowl, combine oatbran, flour, baking powder and salt
- Add the flour/bran mix to butter mix gradually, mixing well after each addition
- Add raisins and white chocolate chunks/chips, mix well
- Prepare a baking tray with greaseproof paper, grease and dust with flour, shaking off any excess
- Drop rounded teaspoons of mix on the the prepared tray, flatten slightly (should make 12-14)
- Bake for 15 minutes on 190C or until golden brown. Cool on wire rack
